Preparing this egg replacer is as simple as combining with water in the desired ratio: 1 tbsp. of egg replacer with 2 tbsp. water for a whole egg, 1 1/2 tsp. egg replacer with 2 tbsp. water for an egg white, and 1 1/2 tsp. egg replacer with 1 tbsp. water for an egg yolk. Mix until smooth and allow to thicken for one minute before using. Although this product will not whip like an egg white for use in meringues or angel food cake, it otherwise functions similarly to eggs in batters.
